Теперь пришло время рассказать про свой pot still-клирик. Крепость — 68 %. На момент дегустации дистилляту (читай — финальному купажу) не исполнилось и двух недель. Конечно, дней через 15-20 он несколько видоизменится и округлится — я обязательно проверю это момент ближе к осени. Однако какие-то фундаментальные вещи нью мейк обязан показать сразу же. Следующим на очереди идет Redbreast 15 (86 баллов при 537 опрошенных виски-гиков). В отличие от двенашки, для этого релиза указан тип хересных бочек, используемых в купаже. Помимо тары из-под бурбона, речь идет о бывшем пристанище для сухого вина «Олоросо». Причем, судя по вкусу, количество хересных бочек здесь оказалось гораздо больше, чем у Redbreast 12. О своем нью мейке я обязательно замолвлю несколько словечек. А пока, для раскачки, в бокале налита ирландская классика стиля single pot still — Redbreast 12 (84 балла на «Вискибазе» при 793 рецензиях). Виски выдерживался в бочках из-под бурбона и хереса. Аромат у напитка фруктовый, маслянистый, пряный и минеральный. Этими приятными летними денечками слышу яблоко, абрикос, льняное и кунжутное масла, что-то еле уловимо…
Вчера я наконец-то залил еще одну бочку. Два месяца ушло на подготовку 64 литров нью мейка, выполненного в ирландском стиле pot still. Проект получил название Black Spot — я писал о нем в начале мая. Клирик состоит на 60 % из ячменного солода, на 35 % из ячменя, на 4 % из ржи и на 1 % из овса. Всего поставил 10 заторов: нечетные перегонялись на седьмые сутки, четные — на восьмые. Готовь сани летом Вдогонку к предыдущему посту расскажу о своем пшеничном виски в американском стиле. Сегодня удалось попробовать напиток прямиком из бочки. В октябре ему "стукнет" 7 лет. Виски готов, так как я чувствую в нем комплексность и полноту. Дистиллят получен из пшеницы (51 %), ячменного солода (28 %) и кукурузы (21 %). Seven Seals Beaver's Dram 46 %. Этот канадский виски выдерживается несколько лет в бочках, а затем перевозится в Швейцарию. Уже там его довыдерживают несколько часов или дней (точной информации не нашел) на дубовой щепе по ускоренному методу созревания Штокхаузена. Yellow Rose Rye Whiskey — батч L23-1 (на «Вискибазе» не значится, но у батча L20-4 оценка составляет 82 балла). Дистиллят на 95 % состоит из ржи и на 5 % — ячменного солода. Выдержка — 3 года в новых обожженных бочках из белого американского дуба. Настоящая американская классика и довольно распространенный рецепт в Штатах. Проект виски в ирландском стиле Black Spot активно движется к своему светлому будущему. Большая часть нью мейка готова, и в конце июня (или начале июля) бочка будет залита. Между тем новые свершения, как и счастье, — не за горами. Речь снова пойдет о ржаном виски. Как всегда, придерживаться какой-то одной рецептуры я не планирую.
