Каберне Фран • 2024 Долина реки Кача, с. Айвовое. Переработка: гребнеотделение без дробления ягоды, ручная сортировка каждой грозди. Убрал все недозрелые и подсушенные ягоды. Брожение спонтанное в дубовых бочках 225 л. Мацерация на мезге — 20 дней. После брожения вино месяц отдыхало в стали, где прошло ЯМБ. Выдержка 12 месяцев: 75% французский дуб, 25% американский. Пино Нуар • 2024. Плато Кара-Тау. Старые лозы возрастом более 50 лет. Переработка: целая ягода без дробления, 10% целых гроздей. Спонтанное брожение в бочках 225 л.
