I grew up loving pineapple upsidedown cake, but always associating it with being rather dense. This cake is so light and fluffy inside it practically has a wiggle to it when sliced. The orange zest is a very uplifting addition in flavour that accentuates the pineapple perfectly. And come on, look how pretty it is!

Corned beef(salt cured beef brisket) is a cheap but highly flavourful option you should always have in your pantry. Served sliced on a sandwich or in a hash, it can be a great meal. This take on a Pavlova uses brown sugar instead of regular granulated which brings a little bit of an extra caramel flavour. However, the peaches are the real star here; the syrup made with the juices and vanilla are wonderful, but the poached peaches themselves are to die for.
