Курапаприка. Филейки, нитритка, Сол, копч. паприка, смесь перцев, аджика и смесь "к курице". Всё на фотках. День-два солиться, затем дня 4-5 на сушку.
Давненько меня тут не было! Ловите слегка изменённый старенький рецепт: куриное филе ~ 700гр сахар\соль нитритная - 10гр 2 головки чеснока (порезанный мелко) соевый соус - 2 ст. л. жидкий дым - 2 ч.л. соус ким-чи - 2 ч.л. бальзамический соус — 1 ст.л. кетчуп - 2 ст.л. оливковое масло — 2 ч.л. Доброго времени суток, господа! Я тут потихоньку начинаю уже делать мяско на заказ! Я уже делал несколько раз вяленое мяско, т пару раз куриные джерки. Но на этот раз я слегка видоизменил рецептуру: я добавил немного меньше соевого соуса, но зато побольше остринки, кислинки в виде хорошего бальзамического уксуса, тимьяна и совсем недавно сделанной домашней аджички. Получилось, как говорится, не просто круто, а п#з…
Вы не ждали, но вот он я! Сегодня по-минимализму: Куриная грудь, нитритка (20 гр на кг), смесь "адыгейская соль", побольше всяких перцев, сушённый чеснок, "кочудян" паста, маринад из чили\халапеньо и кориандр. Завтра повешу часть, в оставшуюся долью мл 80 коньяка и послезавтра на сушку.

Итак, спустя 10 дней засолки обсыпал кусочек фенхелем и смесью для аджики и обернул его в пергамент, после чего тщательно обмотал бечёвкой для придания формы. В пергаменте также проделал кучу дырочек (на фото) чтобы мясо дышало. Взвесил финальный вес и, пометив, повесил для созревания 😊
