обещала про ведение закваски без остатков (или с минимальным) моя закваска живет в холодильнике. я достаю ее непосредственно перед замесом, освежаю 1–2 раза в пропорции 1:1:1 и ставлю опару для теста, а 5–10 г оставляю на хранение до следующей выпечки чтобы остаток был минимальным, нужно рассчитать количество стартера в зивимости от пропорций кормления от конца к началу пример такого расчета⤵️ для замеса мне нужно…

что делать с остатками закваски, я обычно не придумываю – веду без остатков маякните, если нужно лпоподробнее тут 👀 но пришлось вдруг придумать, что делать с несостоявшимся хлебом – жидким тестом без шанса на развитие клейковины. я по невнимательности ошиблась. жалко было выкидывать так получились лепешки на закваске за 15 минут (без преувеличения). к завтраку вообще супер тесто поставила сразу после замеса в холо…
